Living with kidney disease means that I have to be particularly cautious about my diet. My kidneys are not able to filter out certain minerals effectively, so foods high in potassium and phosphorus are off the table. This means avoiding foods like tomatoes, avocados, bananas, melons, and yes, even chocolate. While this can feel limiting, it’s also an invitation to explore new ingredients and cooking methods.

– Eggs or an egg substitute if necessary
